You really cant trim the planes in FS2000 right, since the trim function
has rather large detents, i.e. the "straight and level" trim position
almost always falls between two of them.

I like the CH yokes for this very reason, havent tried the pedals though.
Real controls dont center, and they CH yoke doesnt either, which just
makes it feel more realistic to me. Have you tried trimming out the rudder
forces, btw? It might be torque/P-factor, not the pedals.
